Apple Streusel Cake Recipe
Crunchy apple streusel cake.
Home baked apple streusel cake
This recipe yields a cake of about 8 servings.
Ingredients
Streusel topping:
- Cake flour, 50 g (1/3 cup)
- Cinnamon (ground), 1/2 tsp
- Granulated sugar, 70 g (1/3 cup)
- Unsalted butter (cold, cut into small pieces), 60 g (4 1/4 Tbsp)
Cake:
- Cake flour, 150 g (1 cup)
- Baking powder, 5 g (1 tsp)
- Salt, 1/8 tsp
- Granulated sugar, 100 g (1/2 cup)
- Unsalted butter (room temperature), 60 g (4 1/4 Tbsp)
- Egg (room temperature), 1 medium
- Milk, 85 ml (1/3 cup)
- Vanilla extract, 1/2 tsp
- Apple (peeled, cored, and diced), 2 medium
Directions
Streusel topping:
- In a bowl, mix together flour, cinammon, and sugar
- With your fingertips or a fork, rub the butter into the flour mixture until forming coarse crumbs
- Set aside
Cake:
- In a bowl, sift together flour, baking powder, and salt
- In another bowl, cream the butter with the paddle attachment of the hand mixer
- Add the sugar to the creamed butter and beat until light and fluffy
- Add the egg and vanilla extract to the butter mixture and beat well
- With a spatula, carefully fold part of the flour mixture into the butter and egg mixture until just combined, then do the same with part of the milk
- Repeat the previous step until all the flour and milk are incorporated
- Pour the batter into a greased round 20 cm pie pan and smooth the surface
- Arrange the diced apples on top of the batter and sprinkle with the streusel topping
- Bake in a preheated oven at 180 C for about 50 minutes
- Carefully remove the cake from the cake tin and place on a wire rack to cool
How to serve
Serve warm or at room temperature.
