Banana Cake Recipe
Moist banana cake.

This recipe yields a cake of about 8 servings.
Ingredients
- Cake flour, 150 g (1 cup)
- Cinnamon (ground), 1/4 tsp
- Baking powder, 5 g (1 tsp)
- Salt, 1/8 tsp
- Cane sugar, 75 g (1/3 cup)
- Egg (room temperature), 1 medium
- Unsalted butter, 75 g (5 1/4 Tbsp)
- Vanilla extract, 1/4 tsp
- Banana (very ripe), 1 medium
Directions
- Melt the butter over a low heat and set aside to cool
- Mash the banana until smooth
- In a bowl, sift together flour, cinammon, baking powder, and salt
- In another bowl, beat the egg with the sugar and vanilla extract until thick and creamy
- Add the melted butter and mashed banana to the egg mixture and beat well
- With a spatula, carefully fold the flour mixture into the egg and banana mixture until just combined
- Pour the batter into a greased 20 cm cake tin
- Bake in a preheated oven at 180 C for about 30 minutes
- Cover with aluminum foil in case the top of the cake gets too dark
- A skewer inserted into the center of the cake should come out clean
- Carefully remove the cake from the cake tin and place on a wire rack to cool
How to serve
Serve at room temperature.
