Chocolate Cookie Recipe

Decadent chocolate cookies.

This recipe yields about 24 cookies.

Ingredients

  • Pastry flour, 150 g (1 cup)
  • Cocoa powder (Dutch-processed), 30 g (1/3 cup)
  • Baking powder, 1/2 tsp
  • Salt, 1/8 tsp
  • Granulated sugar, 150 g (3/4 cup)
  • Egg (room temperature), 1 medium
  • Unsalted butter (room temperature), 100 g (7 Tbsp)
  • Vanilla extract, 1/4 tsp
  • White chocolate chips, 100 g (1/2 cup)

Directions

  1. In a bowl, sift together flour, cocoa powder, baking powder, and salt
  2. In another bowl, cream the butter with the paddle attachment of the hand mixer
  3. Add the sugar to the creamed butter and beat until light and fluffy
  4. Add the egg and vanilla extract to the butter mixture and beat well
  5. With a spatula, carefully fold the flour mixture into the butter and egg mixture until just combined
  6. Fold in the chocolate chips
  7. Drop tablespoons of dough onto a baking sheet lined with baking paper (allow some empty space between each cookie)
  8. Lightly wet your fingers and press each tablespoon of dough into a round flat shape
  9. Bake in a preheated oven at 180 C (350 F) for about 12 minutes until the edges of the cookies are firm but the center is still soft
  10. Remove the baking sheet from the oven and leave to cool for about 5 minutes
  11. Carefully peel the cookies off the baking paper and place on a wire rack to cool

How to serve

Serve at room temperature.
