Almond Cream Recipe

Rich almond cream.

This recipe yields about 400 g (14 oz) almond cream.

Ingredients

  • Almond meal, 100 g (1 cup)
  • Powdered sugar, 100 g (3/4 cup)
  • Egg (room temperature), 2 medium
  • Unsalted butter (room temperature), 100 g (7 Tbsp)
  • Salt, pinch
  • Dark rum, 1/2 tsp (optional)

Directions

  1. In a bowl, cream the butter with the paddle attachment of the hand mixer
  2. Add the sugar and salt and continue to beat until light and fluffy
  3. Add the egg and continue to beat until fully incorporated
  4. Add the almond meal and continue to beat until fully incorporated
  5. If using, add the rum and continue to beat until fully incorporated

How to serve

Use as a pie, tart or pastry filling.

Keep refrigerated and use within 24 hours.
