Almond Cream Recipe
Rich almond cream.
Homemade almond cream
This recipe yields about 400 g (14 oz) almond cream.
Ingredients
- Almond meal, 100 g (1 cup)
- Powdered sugar, 100 g (3/4 cup)
- Egg (room temperature), 2 medium
- Unsalted butter (room temperature), 100 g (7 Tbsp)
- Salt, pinch
- Dark rum, 1/2 tsp (optional)
Directions
- In a bowl, cream the butter with the paddle attachment of the hand mixer
- Add the sugar and salt and continue to beat until light and fluffy
- Add the egg and continue to beat until fully incorporated
- Add the almond meal and continue to beat until fully incorporated
- If using, add the rum and continue to beat until fully incorporated
How to serve
Use as a pie, tart or pastry filling.
Keep refrigerated and use within 24 hours.
