American Pancake Recipe

Fluffy american pancakes.

This recipe yields about 8 pancakes.

Ingredients

  • Cake flour, 170 g (1 1/4 cups)
  • Baking powder, 8 g (1/2 Tbsp)
  • Salt, 1/4 tsp
  • Granulated sugar, 30 g (2 1/2 Tbsp)
  • Egg (room temperature), 1 medium
  • Milk (whole), 250 ml (1 cup)
  • Unsalted butter, 30 g (2 Tbsp)

Directions

Batter:

  1. Melt the butter over a low heat and set aside to cool
  2. In a bowl, sift together flour, baking powder, and salt
  3. Add the sugar and mix well
  4. In another bowl, beat together egg, milk, and melted butter
  5. Add the egg mixture to the flour mixture and mix until just combined (the batter should be a little lumpy)

Baking:

  1. Heat a non-stick frying pan until hot but not searing
  2. Lightly butter the frying pan (the butter should foam but not darken)
  3. With a ladle, pour about 50 ml of batter per pancake (leave some space between each pancake)
  4. Cook the pancakes for 2-3 minutes until bubbles form on the surface
  5. Flip over the pancakes and cook for another 1-2 minutes until golden brown

How to serve

Serve hot with butter, sugar, jam, or maple syrup.
