Coconut Macaroon Recipe

Sweet coconut macaroons.

Home baked coconut macaroons

This recipe yields 24 coconut macaroons.

Ingredients

  • Grated coconut, 125 g (1 1/4 cup)
  • Granulated sugar, 100 g (1/2 cup)
  • Salt, 1/8 tsp
  • Egg white (room temperature), 2 medium
  • Vanilla extract, 1/4 tsp

Directions

  1. In a bowl, mix together grated coconut, sugar, and salt
  2. In another bowl, beat the egg whites with the vanilla extract until foamy but not stiff
  3. Add the egg whites to the coconut mixture and stir well until fully hydrated
  4. Drop tablespoons of the mixture onto a baking sheet lined with baking paper (allow some empty space between each macaroon)
  5. Lightly wet your fingers and shape each tablespoon of the mixture into a small mound
  6. Bake in a preheated oven at 180 C (350 F) for 10-12 minutes until the macaroons are golden brown
  7. Carefully peel the macaroons off the baking paper and place on a wire rack to cool

How to serve

Serve at room temperature with a cup of coffee.
