Coconut Macaroon Recipe

This recipe yields 24 coconut macaroons.
Ingredients
- Grated coconut, 125 g (1 1/4 cup)
- Granulated sugar, 100 g (1/2 cup)
- Salt, 1/8 tsp
- Egg white (room temperature), 2 medium
- Vanilla extract, 1/4 tsp
Directions
- In a bowl, mix together grated coconut, sugar, and salt
- In another bowl, beat the egg whites with the vanilla extract until foamy but not stiff
- Add the egg whites to the coconut mixture and stir well until fully hydrated
- Drop tablespoons of the mixture onto a baking sheet lined with baking paper (allow some empty space between each macaroon)
- Lightly wet your fingers and shape each tablespoon of the mixture into a small mound
- Bake in a preheated oven at 180 C (350 F) for 10-12 minutes until the macaroons are golden brown
- Carefully peel the macaroons off the baking paper and place on a wire rack to cool
How to serve
Serve at room temperature with a cup of coffee.
