Rice Pudding Recipe

Creamy rice pudding.

Homemade rice pudding

This recipe yields 4 servings of rice pudding.

Ingredients

  • Rice (short grain, white), 100 g (1/2 cup)
  • Salt, 1/4 tsp
  • Granulated sugar, 30 g (2 1/2 Tbsp)
  • Milk (whole), 800 ml (3 1/3 cups)

Directions

  1. Rinse the rice thoroughly to remove the powdery starch
  2. Cook the rice for 3 minutes in about 500 ml (2 cups) of boiling water
  3. Rinse the rice under cold water and drain
  4. In a heavy-bottomed saucepan, heat the milk over a medium heat with the sugar and salt
  5. When the milk is almost boiling add the rice
  6. Simmer over a medium heat for about 15 minutes, stirring frequently, until the rice pudding is creamy but not too thick
  7. Transfer the rice pudding to individual bowls and leave to cool

How to serve

Serve warm or cold topped with muscovado sugar or caramel sauce.
