Banana Muffin Recipe
Moist banana muffins.
Home baked banana muffin
This recipe yields 6 big muffins.
Ingredients
- Pastry flour, 125 g (3/4 cup)
- Baking powder, 5 g (1 tsp)
- Salt, 1/8 tsp
- Cane sugar, 50 g (1/4 cup)
- Egg (room temperature), 1 medium
- Vegetable oil (canola oil), 50 ml (1/4 cup)
- Milk or buttermilk, 50 ml (1/4 cup)
- Vanilla extract, 1/4 tsp
- Banana (very ripe, mashed except for 6 slices), 1 large
Directions
- In a bowl, sift together flour, baking powder, and salt
- In another bowl, beat the egg with the sugar and vanilla extract until thick and creamy
- Add the oil and mashed banana to the egg mixture and beat well
- Add the milk to the egg mixture and beat for a few seconds
- With a spatula, carefully fold the flour mixture into the egg and banana mixture until just combined
- Spoon the batter into the cups of a greased 6-cup muffin tin
- Top each muffin with a banana slice
- Bake in a preheated oven at 180 C for about 25 minutes
- A skewer inserted into the center of the muffins should come out clean
- Remove the muffin tin from the oven and leave to cool for about 5 minutes
- Carefully remove the muffins from the muffin tin and place on a wire rack to cool
How to serve
Serve warm or at room temperature.
