Banana Muffin Recipe

Moist banana muffins.

Home baked banana muffin

This recipe yields 6 big muffins.

Ingredients

  • Pastry flour, 125 g (3/4 cup)
  • Baking powder, 5 g (1 tsp)
  • Salt, 1/8 tsp
  • Cane sugar, 50 g (1/4 cup)
  • Egg (room temperature), 1 medium
  • Vegetable oil (canola oil), 50 ml (1/4 cup)
  • Milk or buttermilk, 50 ml (1/4 cup)
  • Vanilla extract, 1/4 tsp
  • Banana (very ripe, mashed except for 6 slices), 1 large

Directions

  1. In a bowl, sift together flour, baking powder, and salt
  2. In another bowl, beat the egg with the sugar and vanilla extract until thick and creamy
  3. Add the oil and mashed banana to the egg mixture and beat well
  4. Add the milk to the egg mixture and beat for a few seconds
  5. With a spatula, carefully fold the flour mixture into the egg and banana mixture until just combined
  6. Spoon the batter into the cups of a greased 6-cup muffin tin
  7. Top each muffin with a banana slice
  8. Bake in a preheated oven at 180 C for about 25 minutes
  9. A skewer inserted into the center of the muffins should come out clean
  10. Remove the muffin tin from the oven and leave to cool for about 5 minutes
  11. Carefully remove the muffins from the muffin tin and place on a wire rack to cool

How to serve

Serve warm or at room temperature.
