Buttermilk Muffin Recipe

Golden buttermilk muffins.

Home baked buttermilk muffin

This recipe yields 6 big muffins.

Ingredients

  • Pastry flour, 150 g (1 cup)
  • Baking powder, 5 g (1 tsp)
  • Salt, 1/8 tsp
  • Granulated sugar, 75 g (1/3 cup)
  • Egg (room temperature), 1 medium
  • Vegetable oil (canola oil), 50 ml (1/4 cup)
  • Buttermilk, 100 ml (1/3 cup + 1 1/2 Tbsp)
  • Vanilla extract, 1/4 tsp

Directions

  1. In a bowl, sift together flour, baking powder, and salt
  2. In another bowl, beat the egg with the sugar and vanilla extract until thick and creamy
  3. Add the oil to the egg mixture and beat well
  4. Add the buttermilk to the egg mixture and beat for a few seconds
  5. With a spatula, carefully fold the flour mixture into the egg mixture until just combined
  6. Spoon the batter into the cups of a greased 6-cup muffin tin
  7. Bake in a preheated oven at 180 C for about 25 minutes
  8. A skewer inserted into the center of the muffins should come out clean
  9. Remove the muffin tin from the oven and leave to cool for about 5 minutes
  10. Carefully remove the muffins from the muffin tin and place on a wire rack to cool

How to serve

Serve warm or at room temperature.
