Chocolate Chip Muffin Recipe

Sweet chocolate chip muffins.

This recipe yields 6 big muffins.

Ingredients

  • Pastry flour, 150 g (1 cup)
  • Baking powder, 5 g (1 tsp)
  • Salt, 1/8 tsp
  • Granulated sugar, 75 g (1/3 cup)
  • Egg (room temperature), 1 medium
  • Vegetable oil (canola oil), 50 ml (1/4 cup)
  • Milk or buttermilk, 100 ml (1/3 cup + 1 1/2 Tbsp)
  • Vanilla extract, 1/4 tsp
  • Dark chocolate chips, 100 g (1/2 cup)

Directions

  1. In a bowl, sift together flour, baking powder, and salt
  2. Add most of the chocolate chips to the flour mixture
  3. In another bowl, beat the egg with the sugar and vanilla extract until thick and creamy
  4. Add the oil to the egg mixture and beat well
  5. Add the milk to the egg mixture and beat for a few seconds
  6. With a spatula, carefully fold the flour mixture into the egg mixture until just combined
  7. Spoon the batter into the cups of a greased 6-cup muffin tin
  8. Top each muffin with a few of the remaining chocolate chips
  9. Bake in a preheated oven at 180 C for about 25 minutes
  10. A skewer inserted into the center of the muffins should come out clean
  11. Remove the muffin tin from the oven and leave to cool for about 5 minutes
  12. Carefully remove the muffins from the muffin tin and place on a wire rack to cool

How to serve

Serve warm or at room temperature.
