Chocolate Chip Muffin Recipe
Sweet chocolate chip muffins.
Home baked chocolate chip muffin
This recipe yields 6 big muffins.
Ingredients
- Pastry flour, 150 g (1 cup)
- Baking powder, 5 g (1 tsp)
- Salt, 1/8 tsp
- Granulated sugar, 75 g (1/3 cup)
- Egg (room temperature), 1 medium
- Vegetable oil (canola oil), 50 ml (1/4 cup)
- Milk or buttermilk, 100 ml (1/3 cup + 1 1/2 Tbsp)
- Vanilla extract, 1/4 tsp
- Dark chocolate chips, 100 g (1/2 cup)
Directions
- In a bowl, sift together flour, baking powder, and salt
- Add most of the chocolate chips to the flour mixture
- In another bowl, beat the egg with the sugar and vanilla extract until thick and creamy
- Add the oil to the egg mixture and beat well
- Add the milk to the egg mixture and beat for a few seconds
- With a spatula, carefully fold the flour mixture into the egg mixture until just combined
- Spoon the batter into the cups of a greased 6-cup muffin tin
- Top each muffin with a few of the remaining chocolate chips
- Bake in a preheated oven at 180 C for about 25 minutes
- A skewer inserted into the center of the muffins should come out clean
- Remove the muffin tin from the oven and leave to cool for about 5 minutes
- Carefully remove the muffins from the muffin tin and place on a wire rack to cool
How to serve
Serve warm or at room temperature.
