Pizza Sauce Recipe
Fragrant pizza sauce.
Homemade pizza sauce
This recipe yields sauce for a 30 cm pizza.
Ingredients
- Tomato (fresh, very ripe), 2 medium
- Salt, to taste
- Pepper, to taste
- Oregano (dried), to taste
Directions
- With a sharp knife, score an 'x' on the base of the tomatoes
- Immerse the tomatoes in boiling water for about 15 seconds until the skins start to split
- Put the tomatoes in a bowl with cold water until cooled enough to handle
- Peel away the tomato skins
- Cut the tomatoes in eights and remove the seeds
- Process the tomatoes in a food processor until coarsely chopped
- Cook the tomatoes in a non-stick frying pan over medium heat for about 2 minutes until the juices are released
- Strain the tomatoes
- Return the tomatoes to the frying pan and cook for 5 more minutes until most of the moisture has evaporated
- Season to taste with salt, pepper, and oregano (rub between your fingers to release the fragrance)
- Set aside too cool
How to serve
Spread thinly on pizza dough before topping and baking.
