Pizza Sauce Recipe

Fragrant pizza sauce.

Homemade pizza sauce

This recipe yields sauce for a 30 cm pizza.

Ingredients

  • Tomato (fresh, very ripe), 2 medium
  • Salt, to taste
  • Pepper, to taste
  • Oregano (dried), to taste

Directions

  1. With a sharp knife, score an 'x' on the base of the tomatoes
  2. Immerse the tomatoes in boiling water for about 15 seconds until the skins start to split
  3. Put the tomatoes in a bowl with cold water until cooled enough to handle
  4. Peel away the tomato skins
  5. Cut the tomatoes in eights and remove the seeds
  6. Process the tomatoes in a food processor until coarsely chopped
  7. Cook the tomatoes in a non-stick frying pan over medium heat for about 2 minutes until the juices are released
  8. Strain the tomatoes
  9. Return the tomatoes to the frying pan and cook for 5 more minutes until most of the moisture has evaporated
  10. Season to taste with salt, pepper, and oregano (rub between your fingers to release the fragrance)
  11. Set aside too cool

How to serve

Spread thinly on pizza dough before topping and baking.
